TIME FOR SOME CHANGES

Maybe it's because the winter has seemed so long and we haven't interrupted it with a cruise this year. But I've been feeling the need to do something different; make some changes; learn something new. So I signed up for a class at Terra and I am going to learn How to Buy and Sell on EBay. So far it is very interesting. As the teacher said, don't plan on becoming a millionaire, but it is fun and you can make a few dollars here and there.
I also recently signed up with my friend Marsha to take a class in calligraphy. She was cutting my hair the other day and we discussed learning something new. The next day I saw an article in the paper about the class, so I called Marsha and we decided to go together. Our first class is Saturday, and we're both excited about it.
Then I found a website for PenPals and found a lady close to my age. She is retired and living in a small town in Maine. She loves to paint, write poetry, and read among other things - all things I love to do as well. I really hope to have a friendship with her that will grow over the years.
So I guess this goes to show you can learn something new no matter how old you are, even though you can't find your computer glasses (like me)
Our new neighbors are moving in this week, so I baked a bundt cake but didn't want to frost it. In a very old cookbook, I found this recipe for a chocolate glaze. It worked wonderfully, and the taste is great as well.
Chocolate Glaze
Melt 2 ounces of unsweetened chocolate and 3 tablespoons of butter or margarine over low heat. Remove from heat, stir in one cup confectioners' sugar and 3/4 teaspoon vanilla. Mix in about 2 tablespoons hot water, until glaze is of proper consistency.
I found this next recipe in a popular magazine and decided to try it since I had leftover ham. Everyone asked for seconds!!
Ham and Biscuits:
Prepare a can of large biscuits, bake, and set aside.
CREAM SAUCE
1 cup cubed ham
1/4 cup chopped onion
3 tbl. Oleo or butter
1/2 tsp. chicken bouillon granules
1/2 tsp. Worcestershire sauce
1/8 tsp. pepper
3 tbl. all purpose flour
1 3/4 c. milk
3 hard cooked eggs - chopped
1 tbl. parsley
In a large skillet, saute ham and onion in Oleo 3-4 minutes or until onion is tender. Stir in bouillon, Worcestershire sauce, and pepper. Combine flour and milk until smooth and gradually stir into pan. Bring to boil; cook and stir for 2 minutes or until thick. Gently stir in eggs and parsley. Serve over split biscuits.
Food for thought: People with clenched fists cannot shake hands....
