Bakin' Bits
By Bonnie Dick

The family cruise was a success, and we're all home safe, sound, and full of sun, sand, and gourmet food.   It was a treat anyway not to have to cook for two weeks, but as those of you who have cruised before know, the food is usually fabulous.

I tried Chilean Sea Bass with Caviar Sauce.  The flavor was out of this world.  Our son Chuck told us that meal would be close to $100 in a good restaurant.  Chuck earned his way through college as a waiter at Real Seafood in Ann Arbor, so he knows good food.    I also had broiled orange roughy which was also an excellent meal.

By the end of the vacation, we were anxious to get home and back to normal menus, so the first thing I fixed was a giant meatloaf.   Today on the menu is Yankee Pot Roast.

I must say the only negative thing about our whole trip was the last plane trip from Miami to Detroit, where the kid in the aisle seat ahead of me spent three hours picking his nose.   I'd say he made a good pair with the man who sat at the next table at dinner the first night on board who stuck a car key in his ear and then wiped it on his jacket.

On a more tasty note, here's a recipe for Vegetable Pizza, which I take to potlucks quite often.

VEGETABLE PIZZA
Arrange two cans of Pillsbury Crescent Rolls (12) on cookie sheet to form a crust.  Bake approx. 10 minutes at 375 and cool.

Blend together the following ingred. and spread over the crust:  two 8 oz. pkg. of softened cream cheese, 3/4 cup light Miracle Whip, and one package of Hidden Valley Ranch Dressing (dry in a pouch).  Sprinkle 1/2 cup each of the following, chopped fine:  green pepper, cauliflower, broccoli, olives, cucumbers, tomatoes, green onions, mushrooms.  Top with grated cheese of your choice.  Using your hands, press down slightly.  Chill one hour and cut into squares.

PEACH COBBLER PIE
1 c. self-rising flour
1 cup milk
1 med. can sliced peaches
1 cup sugar
2/3 stick butter or oleo

Mix flour, sugar and milk.  Melt butter in large baking dish.  Pour batter over the butter and slowly stir with knife.  Pour peaches (including the juice) over the batter.  Sprinkle top with 1/4 cup of sugar.  Bake in preheated oven 375 until dough reaches top and is brown.

Food for Thought:  A good friend will come and bail you out of jail, but a true friend will be sitting next to you saying, "Damn!  That was fun!"
